I woke up this morning, looked at the calendar, and smiled…

Not because it’s just another day, but because it’s Earth Day 🌍

And for me, that means something deeper than a date on the calendar. It’s a pause. A moment to zoom out from the noise, the orders, the baking schedules, the farmers market hustle… and ask myself:

Am I still cooking with purpose?

Am I still honoring the reason I started all of this?

And the answer is yes. More than ever.


🌱 Earth Day, From My Kitchen to the Planet

As a chef, I’ve spent most of my life chasing flavor, technique, and perfection.

But somewhere along the way, my focus shifted.

I started asking different questions:

  • Where do my ingredients come from?

  • How do they affect my body?

  • And more importantly… what impact do they have on the world around me?

Because the truth is, food is never just food.

Every ingredient carries a story.
A footprint.
A consequence.

And Earth Day is that gentle reminder that those choices matter more than we think.


🍞 Why I Chose Vegan and Gluten-Free

When I first moved toward a vegan and gluten-free lifestyle, I’ll be honest—it wasn’t about saving the planet.

It started with health.

I wanted to feel better. Lighter. More energized. More connected to what I was eating.

But once I stepped into that world, I realized something powerful:

A plant-based, wholesome approach doesn’t just support our bodies…
it supports the earth, too.

  • It requires fewer resources like water and land

  • It reduces strain on ecosystems

  • And it encourages us to work with ingredients, not against them

And gluten-free, when done right—not processed, not full of gums—but built on real grains and seeds… it becomes something honest again.

Something nourishing.


🔥 The Problem with Bread (And Why I Couldn’t Ignore It)

Let me be real for a moment.

Most gluten-free bread out there?
It’s disappointing.

Either:

  • Packed with gums and fillers

  • Overly processed

  • Or just lacking soul

And as a chef, that didn’t sit right with me.

Bread is sacred. It’s one of the oldest foods we have. It’s something we share, something we break together.

So I couldn’t accept that gluten-free meant “less than.”

I went back into the kitchen with a mission.

I tested flours.
Played with hydration.
Adjusted psyllium.
Burned through batches like it was my job… because it was 😅

And slowly, something started to happen.

Bread came back to life.


🍞 Oh My Loaf: Simplicity with Purpose

That journey turned into Oh My Loaf.

Not just a product. Not just a mix.

But a philosophy.

I wanted to create something that:

  • Anyone could make

  • With real, wholesome ingredients

  • Without feeling overwhelmed

That’s where the Pour. Mix. Bake. concept was born.

Because baking should feel empowering, not intimidating.

And every loaf should feel like something you’re proud to eat… and proud to share.


🌍 The Bigger Picture: Why This Matters

Now let’s bring it back to Earth Day.

Because this is where it all connects.

We often think that helping the planet requires big, dramatic changes.

But in reality?

It’s built on small, consistent choices.

What we eat every day plays a massive role in:

  • Resource consumption

  • Agricultural practices

  • Environmental impact

And when we choose:

  • Plant-based ingredients

  • Wholesome, minimally processed foods

  • Simple, intentional cooking

We’re doing more than feeding ourselves.

We’re participating in a better system.

Not perfectly. Not all at once.
But step by step.


💛 My Earth Day Reflection

If I’ve learned anything on this journey, it’s this:

You don’t have to be perfect to make a difference.

You just have to care enough to start.

Maybe it’s switching one meal.
Maybe it’s baking your own bread for the first time.
Maybe it’s simply reading an ingredient label and asking, “What is this?”

That curiosity? That awareness?
That’s where change begins.

For me, it started with bread.

And today, it’s grown into something much bigger than I ever imagined.
